Since its founding in 1823, Shata Sake Brewery has been committed to making delicious sake by using the subterranean river of the Hakusan mountain range on the alluvial fan of the sacred Hakusan Tedorigawa River.
Although the process of making sake has become increasingly mechanized, the processes that involve human senses and experience, such as preparing koji yeast and fermentation starter, are still carried out by hand, and these techniques have been handed down since the establishment of the brewery.
In the 1960s, the previous owner of the company conducted extensive research together with master brewer Nakasaburo to establish the Yamahai brewing method (making sake yeast by eliminating the yamaoroshi method). This method, combined with aging the brewed sake before shipment (to produce the yamabuki color), has enabled the company to produce delicious sake for the world to enjoy.

The name “Tengumai” comes from a legend according to which a tengu goblin, who lived in the forest where the brewery was located, tasted the brewery’s sake and danced to the delight of its taste.
