Gochoda Sake Brewery prides itself for growing its own sake rice - this is what Japanese terroir is all about
The Gochoda Sake Brewery, located in Shiota, Ureshino City in western Saga Prefecture, was founded in 1922 as a branch of the Seto Sake Brewery.
The brewery celebrated its 100th anniversary last year. Their brand name “Azumaichi” reflects their wish to become the “best sake in the East.”
Since 1988, the company has been commited to using a sake brewing process that grows both rice and yeast on its own, specializing in Yamada Nishiki sake rice and Kumamoto yeast.
The three horizontal lines on the label design represent “people, rice, and brewing,” and the five vertical lines are the five main flavors of sake (sweet, sour, spicy, bitter, and astringent). The sake is the result of a united effort by all the brewery workers.
